This year has been such a big traveling year for me and I love sharing it with you guys! It just so happens that I needed to go to San Diego twice this year and I’m so happy I did! I was so blown away by the food, atmosphere and the gorgeous weather. Even though we were in San Diego for business we found time to enjoy the hotel, the views and of course the food.
San Diego 2017
The first thing we did in San Diego was explore our hotel, we stayed at The Rancho Bernardo Inn. The hotel is surrounded by a gorgeous golf course, an amazing spa and of course incredible restaurants. The layout of the hotel was so beautiful that I decided to incorporate more of it into this post!
The Veranda Fireside Lounge & Restaurant
The first restaurant we dined at was The Veranda Fire Side Lounge & Restaurant. We sat outside and had a gorgeous view of the golf course, this was my favorite restaurant to go to because of the food and the breath taking views. After a long day of flying across the country we were in need a of big lunch, and that’s exactly what we got. Bread with a tomato confit dipping oil was brought out to us, to wash it down I got a Guava Mango Refresher. As an appetizer my mom and I split the Short Rib Quesadilla, which came on a sun-dried tomato tortilla. I ordered the Veranda Burger which included smoked gouda, tomato confit, arugula, pancetta, balsamic onions and house made aioli. We were so full from lunch that we actually skipped dinner!
Taking a break from all of the carbs from the day before I ordered The Incredible Hulk Smoothie which included greens apples, spinach, avocado, cucumber, pineapple, celery, soy milk and agave. This was a great breakfast that actually kept me full until lunch. My mom ordered the Short Rib Hash which looked incredible, it came with pulled short rib, potatoes, a poached egg, avocado, ranchero hollandaise and scallions.
We had a day off from the seminar we were at so we decided to stay and explore the hotel. Spending the day at the spa had to be one of my favorite days there, we had the pool to ourselves under a gorgeous canopy for the whole day. After our massages we ordered lunch. For a drink I got the Coconut Lavender Lemonade, for an appetizer we split the Roasted Corn Bruschetta and I ordered the Avocado Turkey Wrap which was incredible!
For dinner that night we dined inside of the Veranda Fire Side Lounge for a change. I got the Blackberry Honey Lemonade and the Diver Scallops. This dish came with seared scallops, a coconut carrot puree, shaved asparagus and lemon scented blackberries.
I was so impressed by the hotel, the views and the incredible food! If you ever find yourself in San Diego you should definitely consider staying at the Rancho Bernardo Inn!
